on a larger plafonnier, where is the most likely location to find a signature?

I suspect it will depend very much on how the maker decides to go with it.
Some will try to make it obscure and hidden in the pattern, others a moulded mark, while others may sign. :)

If your particular interest is French examples, the Etling Project lists three large plafonniers. The signature is on the rim in all three. Here are links to pictures of the signatures.
