You have one at each place setting or larger one for sharing. A little hot water is put in and then the spoon. I used to know why they were needed but that useless fact seems to have dropped into a black hole in the grey matter. They are mostly, but not always fish or shell shapes. Glass is less common than pewter, silver and ceramic - probably because you could put much hotter water into them than you could glass ones.
